Hello I want to do Undergraduate Program from the Babu Banarasi Das University Lucknow so please provide me the complete list of the Undergraduate Programs offered by this University? Also tell me the eligibility criteria required to get admission in these courses?

Babu Banarasi Das University (BBDU) is among the top hotel management college in Lucknow. It offers a rigorous 4-year course on Hotel Management and Catering Technology, which encompasses every aspect of hospitality.


Bachelor in Hotel Management

Eligibility Criteria:
A Minimum aggregate of 50% or equivalent in 10+2 or equivalent
Relaxation in qualification and reservation is as per UGC and State Govt. norms.

b) Cleanliness of surface & Garbage Disposal


UNIT 2
KITCHEN ORGANIZATION:
a) kitchen Brigade
b) Duties and responsibilities of Kitchen Staff
c) Responsibilities of each section
EQUIPMENT AND TOOLS:
a) Pre-preparation & Preparation equipments
b) Ancillary equipments: knives, utensils, pots and pans.
c) Bakery equipment
d) Modern Development in Equipments


UNIT 3
BASIC METHODS OF COOKERY:
a) Modes of Heat Transfer
b) Various methods of Cooking: Definition, Rules, Associated
Terms, Moist Methods: Boiling, Poaching, Steaming, Stewing, Braising.
c) Dry Methods: Frying, Grilling, Roasting, Broiling, And Baking.
d) Modern Methods

UNIT-4
UNDERSTANDING RAW MATERIALS:
a. Understanding of common ingredients, classification and available Forms
b. Uses and storage
c. Salt, Liquids, sweetening, Fats, and Oils, Raising or Leavening agents.
d. Thickening and binding agents, Flavorings and seasoning.
