Health Care

Microbiology PhD holders can become Clinical Microbiologist and run a Clinical Microbiology Lab.
Legal

As a lot of biotechnology uses microbes (and getting a PhD in Microbiology generally makes you biology literate),
A lot of demand for people with these skills to go into fields like Patent law and Technology transfer.
