The mission of Seattle Culinary Academy is to provide students with a foundation of culinary, baking and pastry skills that allow them to excel in food-related careers while at the same time fostering environmental stewardship.

The Seattle Culinary Academy’s certificate programs are accredited by the American Culinary Federation Education Foundation’s Accrediting Commission.

Culinary Arts Program

The Culinary Arts program is 6 quarter (certificate) or seven quarter (AAS degree) course of study.

The curriculum fabricate on classical techniques by put together the modern cooking styles and methods of a variety of international cuisines, and seasonal northwest cooking.

The focus is on sustainable principles and practices in order to teach students about the impact on and responsibility for the environment and society.

One learns to prepare appetizers, soups, sauces, salads, entrees, vegetables and starches, breads, pastries and desserts.

One also learns to identify and fabricate meat, poultry and fish. With cooking and pastry techniques, the program covers sanitation, nutrition, management, purchasing, costing, menu development, and food and wine pair.

As a final project, each one completes a “Chef of the Day”, where one plan the menu, develop and cost all recipes, order product, and finally prepare the meal.

One need demonstrate mastery of skills and knowledge attained over the previous quarters.
